Produced with passion by our master craftsmen, we present to you our Don Cala Reserva ham shoulder. Reared on natural fruits and herbs, these pigs have spent the majority of their lives wandering freely in natural areas of more than 10,000m2. Now, you can enjoy our magnificent shoulder range, carefully cured with an intense flavour for a true authentic taste of Spain. The ham shoulder is the front leg of the pig and contains slightly less meat than our hams. Considering they are smaller and weigh less the curing process is shorter. Salting while raw exaggerates the taste and its reddish tone highlights the exquisite flavours to come.

From our selection, we present to you four different categories of ham shoulder: Tradición, Sensación, Reserva and Gran Reserva.

Reserva

Our Reserva selection comes from pigs reared freely in a natural environment and fed with an exquisite diet based on grasses, cereal crops and cork oak acorns. Curing times are: 36 months for ham and 24 months for the shoulder.

Upon cutting an attractive cherry red colour is revealed with good marbling and a delightful lustre (both in the lean and fat) which are all characteristics of its high quality. Its flavour is delightful, sweet and intense in equal measure. For all tastes.

Whole Pieces: If you are already a ham expert and have all the necessary tools, then there is nothing better than one of our whole pieces to enjoy a freshly cut slice of ham or shoulder. A whole ham weighs around 8 kg compared to a shoulder which weighs around 5.5 kg.

 

Here at Don Cala, we want you to enjoy our Spanish artisan products in all their glory, that’s why we offer you various alternatives so you can choose which gastronomic experience suits you best.

Boneless: Here at Don Cala you can also buy our hams and shoulders already boned by our master craftsmen. A boneless ham weighs around 4.5 kg compared to a boneless shoulder which is around 2.5 kg. You simply slice it to whichever thickness you prefer and enjoy it in the comfort of your own home.

Sliced: Our sliced hams and shoulders come in vacuum packed sachets and weigh 80 grams. The perfect amount to eat before it can begin to dry out. Simply open and serve, to enjoy the unique, fresh and exquisite taste of Guijuelo directly to your table.

Guidelines for storing and consumption

1. Store the product in a cool and dry place and keep out of direct sunlight.

2. Once cut, consume your product within 21 days (or within 16 days in the summertime).

3. Hang the product or store it in a ham holder.
